Our authentic Uruguayan chimichurri sauce is a generational family recipe that was lost for nearly 20 years until it fell out of a recipe book during a move 4 years ago. It brings back memories of days enjoying the site and smells of Montevideo’s Mercado del Puerto while sipping on Medio y Medio. Traditionally a condiment for grilled beef, our chimichurri is versatile and can be used on any grilled meat, on sandwiches or as a marinade. A Gaucho is a nomadic and colourful horseman and cowhand of the Argentine and Uruguayan Pampas (grasslands), who flourished from the mid-18th to the mid-19th century and has remained a folk hero similar to the cowboy in western North America. It is in their spirit we honour them by using them as our sauce namesake
